Winemaking notes:

Manual harvest in small crates Fermentation in small vats with punching down

by hand and temperature controlled at 28o C. Very soft pressing with a press

traditional manual press. Matured in Allier oak barrels for 14 months. Matured

in bottle for at least 18 months.
