Soil type: clay-limestone, slightly sloping.
Exposure and altitude: South South-West, 80-100 metres above sea level.
Training system and planting density: Espalliera - 3500 plants per hectare , Pergola pugliese - 2000 plants per hectare.
Yield per hectare: 100-120 quintals per hectare, about 3-4 kg per vine.
Harvest period: end of August pinot nero and second ten days of September bombino bianco, with manual harvesting and selection of the grapes.
Ageing and maturation on the lees: each bottle rests for a minimum of 30 months protected from light and draught, at a temperature of 13° C, in the basement of our ancient wine cellar.
Disgorgement: a la glace by hand, without the addition of dosage syrup, approximately two months before marketing.
Colour: deep straw yellow with golden reflections and fine perlage.
Nose: elegant, rich with toasted bread notes and hints of pastry.
Taste: dry, harmonious with a very elegant, fresh mouthfeel and subtle creaminess. After 30 months of ageing it releases pulsating, biting but also sweet sensations.
