Tenute Rubino's Oltremé rosé wine originates in the vineyards of the Jaddico Estate, just 8 km from Brindisi. Here, the Susumaniello grape is enhanced in its rosé version.
Following manual harvesting in the first ten days of September, the grapes are vinified with brief contact of the must with the skins, in temperature-controlled steel tanks (16-18°C). Maturation is for 4 months in steel, followed by 1-2 months in the bottle.
Intense pink in colour, the nose expresses aromas of red fruit, cherry and raspberry, with slight spicy notes. The taste is fresh and slightly savoury, with a pleasant fruity persistence.
Ideal with grilled octopus, stewed mullet or a tuna or beef tartare.
